The challenge: A fun-loving medium-to-full-bodied red, zinfandel is known for its jammy fruit flavors and characteristic spiciness. How to get all that excitement onto your palate in one sexy swirl?

The stemware: When it comes to zinfandel, a large red wine glass with a wide bowl and a tapered rim can help to enhance all that layered, spicy brilliance.

The pour: The Riboli Family of San Antonio Winery knows a thing or two about crafting high quality zins. Sip the winery’s 2018 Opaque Zinfandel for a primer on the varietal (and to understand why Paso zinfandel continues to enjoy a cult-like following). Utilizing estate-grown fruit cultivated on a steep, rocky hillside of dry shale soil, head-trained zinfandel vines impart a distinct minerality you just can’t fake. After aging in French oak barrels for 18 months, this zin reveals ripe flavors of blackberry and black cherry exuberance. It just goes to show: In the end, the struggle is well worth the wine.

Syrah

The challenge: Syrah is infamous in Paso Robles Wine Country for its unbridled richness. Deep, dark and dangerous, this inky red beast is full-bodied and saturated, with notes of dark fruit, pepper and spice. How does one accommodate this larger-than-life variety?

The stemware: An ample, wide-bowled glass with a slightly tapered rim is best suited for syrah, which allows for proper aeration and release of its complex and peppery aromas. Remember: The wider the bowl, the better!

The pour: Caelesta Wines, Vineyard and Truffiere’s 2018 Denner Vineyard Syrah begins with black tea, bright fruit and black currant swagger. Fig, peppercorn and blackberry carry through the supple, polished tannins that slide to a silky finish. Needless to say: this wine comes off strong and needs a little time to open up over an evening of food and conversation. See? No need to be afraid of the big, bold wolf.

Chardonnay

The challenge: Chardonnay can be a lot of things, depending on how it’s made: rich and round; austere and acidic. So, do you need multiple glasses to tackle this varietal’s multiple personalities?

The stemware: Luckily, all you really need for chardonnay is a medium-sized, wide-bowled glass, which will enhance the wine’s luxurious aromas while allowing for proper aeration. Whew!

The pour: Harmony Cellars winemaker Chuck Mulligan barrel ferments his 2021 chardonnay, then allows the new wine to gain complexity by extended aging with the yeast (called sur lie). Word on the street: a portion of the wine is allowed to go through malolactic fermentation, adding a double layer of complexity and the signature sweet, buttery note and creamy texture that has made Harmony Cellars chardonnay famous. The challenge: A medium to full-bodied Rhone white, Viognier is known for its delicate floral aromas and juicy flavors of apricot, peach, and honeysuckle. All of this romance, however, can be overpowered with a way-too-wide glass.

Kiame Wine Cellars: Opposites attract

Real estate meets real wine passion: In biz relationships, having different backstories has a way of paying off! Kiamie Wine Cellars is a collaboration between two guys with totally diverse yet complementary backgrounds. While living in New York City, Aram Deirmenjian and Greg Johnson always shared a history and enthusiasm for wine. That, it seems, is where the similarities end. Aram grew up working in his family’s vineyards, spending every summer helping out with the backbreaking harvest. Meanwhile, Greg, an heir to the Kiamie Real Estate throne in New York, spent his life sipping fine wines and making a name for himself at one of New York’s top-selling wine shops. Together, the guys realized their dream of developing a world class California winery, naming the business after Greg’s mother’s maiden name, Kiamie. Iron Oaks Winery: Cowboy throws his hat into the ring

Wine cowboy: Iron Oaks Winery Founder Doug Burkett admits he “didn’t know a damn thing about wine” when he started. However, there is far more depth behind the winery founder than just a true blue cowboy attitude. Burkett started selling juice to a winemaking friend in 2010, watching their wine label grow. After a stint in Sacramento bartending and selling wine, he received a chance phone call that led him to San Francisco, where he co-founded Rebel Coast Winery with a pal. After “a ridiculous five year stretch of shenanigans and tons of fun,” he felt it was time to move on.” Burkett said. “That fall of 2017, I moved to our family ranch and started my cattle business, DD Cattle Co. This brought me down to Paso Robles, where a chance encounter with some pretty cool guys (California Coast Beer Co.) opened the door to re-start my wine dream.” In 2018 Iron Oaks Winery was born! But, as the founder likes to say, you’ll have to get the rest of the story by hanging out at the tasting room. Stop by Iron Oaks Winery today and hear this yarn for yourself. Villa San-Juliette: American Idol producers spotlight Paso

Lights, camera, wine: Sometimes, the stars have a way of aligning in the most incredible way! In 2005, Villa San-Juliette proprietors Ken and Julie Warwick, along with Nigel Lythgoe, began the pursuit of turning their long-held dream of owning a vineyard into a reality. Once childhood friends in the backstreets of Liverpool, the Emmy-winning pair grew up to produce the primetime hit, American Idol. It was during their time on Idol, traveling between audition cities, that the friends first discovered Paso Robles, which was still a wine region growing under the radar. Oct. 2 – Hoyt Family Vineyards –  Chili Cook-off

Beans and meat, oh what a treat: Who makes the best chili in Paso? You be the judge! Sample dozens of locally-crafted chili recipes at Hoyt Family Vineyards’ fiery Chili Cook-off, sure to wake up your palate and ignite a craving for smoke, diced onion and melted cheese goodness. Sizzling to a boil on Oct. 2 from 11 a.m. to 4 p.m., the third annual event brings together breathtaking vineyard views, creative artisans, fabulous estate wine samples, and a totally worthy cause (this year’s beneficiary is New Life K-9s, a group that provides service dogs to veterans and first responders suffering from PTSD). Plus, kids are welcome to attend the shindig, which takes place at The Ranch, located at 2015 Township Road in Paso Robles. Experience this fierce competition pitting together new and veteran chili makers (and be the one to help select the first place, people’s choice, and showmanship awards). Oct. 14 – Villa San-Juliette – Truffle Dinner

Twelve varieties, one vineyard and endless pairing possibilities: this is what makes a winemaker dinner at Villa San Juliette so enticing! Speaking of exciting flavor combos, are you ready for a fall flavor profile to rule them all? Dive into a rich and luxurious world of earthy, savory truffles at the winery’s anticipated Truffle Diner, slated for  6:30 p.m. on Oct. 14 . Hosted at the gorgeous European-styled tasting room, a $140 ticket secures a seat at this exclusive table, where entrees crafted by winery chef Roberto Lavarini are married with 2021 vintage offerings courtesy of VSJ winemaker, Dan Smith. Come hungry, truffle-hounds: This is a four course feast set for 30 rumbling tummies (creamy porcini risotto and stellar shaved black truffle beef carpaccio top the menu). Needless to say, we have reason to believe that tickets will sell out quick!

Oct. 16 – Bodega de Edgar – Tacos & Tempranillo Party

No time for a siesta: Chips and salsa, tequila and lime, salt and avocado—some pairings are just made in heaven’s cantina. Celebrate the deliciously unique (but oh-so-perfect) merger of rich tempranillo and tasty gourmet tacos at a lively fiesta unfolding at Bodega de Edgar on Oct. 16 from noon to 4 p.m. A $25 ticket gets you a whole lot of party: sample the winery’s anticipated 2019 tempranillo offering, nibble on elegant bites prepared by local Paso Robles chefs and—of course—chow down on epic tacos courtesy of Edgar’s padre, Alfonso (seriously; this guy knows how to make a mean taco). Oct. 31 – Parrish Family Vineyard – Paired Flights

Pair, nap, repeat: Sundays just got that much lazier thanks to Parrish Family Vineyards’ reoccurring Paired Flight events, sure to reframe the way you think about winery food altogether. Unfolding each week from noon to 3 p.m. by online reservation only, you’re encouraged to dine, lounge and converse the hours away at the winery’s scenic Paso Robles tasting room. Each Sunday in October (yes, even Halloween day) savor a top notch three-course dining experience featuring the winery’s award-winning estate wines paired with morsels prepared by local legends Ethan Ray and Cecily Parrish Ray (tickets are $60 per person/$50 for wine club members). These aren’t any old “small plates,” ghosts and ghouls: enjoy sauvignon blanc paired with sumac shrimp, cabernet sauvignon with bison short ribs and late harvest offerings with pound cake laced with (gasp!) duck fat. Missing out on this one would be a horror, indeed!
