The three Paso Robles wineries below are worth your time precisely because they’ve built something you can’t get anywhere else: one lets you sleep on a working estate in suites named after the grapes growing outside your window, one is helmed by the same winemaker behind one of California’s most respected Rhône producers, and one is among a handful of fully certified-organic vineyards on the Central Coast. Each offers a different reason to slow down and pay attention.
CaliPaso Winery & Villa — Sleep on the Estate
Most visitors to Paso Robles wine country drive between their hotel and the tasting rooms. At CaliPaso Winery, you skip the drive entirely — you step off your private balcony, walk past the vines you were watching at sunset the night before, and start your morning with a complimentary tasting on the estate. It’s one of the rarest combinations in the region: a working winery with eight luxury suites built directly on the vineyard property, about ten minutes east of downtown.
The property sits along Buena Vista Drive on the Eastside, where the rolling terrain and warm-day, cool-night climate give CaliPaso’s estate-grown grapes a long ripening season. Each of the eight guest suites is named after a grape variety — Cabernet, Nebbiolo, Viognier, Sangiovese, Pinot Grigio, Moscato, Winemakers, and Grappa — with its own fireplace, private balcony or patio, and vineyard views. Mornings include a proper sit-down breakfast and a complimentary tasting, so your first pour of the day is a short walk from your room. The villa welcomes families and dogs, which sets it apart from most of the region’s more exclusive vineyard stays.
On the wine side, Senior Winemaker Enrique Torres — who started working Paso Robles harvests in 2001 — runs a minimal-intervention program built around Eastside-suited varieties. The estate Cabernet Sauvignon is the flagship: hand-harvested, small-batch fermented, aged in French and American oak, and priced well for an estate-grown Paso Cab (most bottles under $30). The Tempranillo — grown from cuttings that trace back to Spain — is the quieter standout, with dark fruit and a smoky, peppery finish. Beyond the estate, CaliPaso also pours at a downtown Paso Robles tasting room at 809 13th Street (open daily into the evening) and a second location in downtown San Luis Obispo, so you don’t have to be a villa guest to taste the lineup.

Lone Madrone — Rare Varietals from a Winemaker You Already Trust
If you’ve had a bottle from Tablas Creek, you already know Neil Collins’ winemaking — he’s been Tablas Creek’s winemaker since 1998. What fewer visitors realize is that Collins also runs his own small label, Lone Madrone, founded in 1996 with his wife Marci and his sister Jackie Meisinger. The name comes from a single madrone tree overlooking the Carver Vineyard, where a standout Cabernet Sauvignon first convinced Collins to start the label.
What makes Lone Madrone worth seeking out isn’t scale — it’s the varietals nobody else on the Eastside or Westside is bothering with. Alongside Rhône staples like Syrah, Grenache Noir, and Mourvèdre, the estate produces single-varietal bottlings of Picpoul Blanc, Chenin Blanc, Tannat, and Nebbiolo — wines you won’t find at most Paso tasting rooms.
The vineyards are dry-farmed and head-trained, an old-world, lower-intervention approach that reflects the family’s broader farming philosophy. The second generation — Jordan Collins, Lucas Meisinger, and Austin Collins — has since joined the winery, so the family-run character isn’t going anywhere.

Seven Oxen Estate Wines — Certified Organic, Downtown Convenient
Seven Oxen Estate Wines started as a friendship project: Adriana Neal and the husband-and-wife team of Bastien and Rebecca Leduc built a 130-acre estate in the Templeton Gap around a shared belief that a smaller, more careful footprint could still produce serious wine. The estate vineyard is CCOF-certified organic — 26 acres of head-trained, spur-pruned vines on southwest-facing slopes that catch coastal breezes from 30 miles away, which keeps acidity balanced even through Paso’s hottest summer stretches.
Winemaker Bastien Leduc works exclusively with 100% estate-grown fruit and leans toward single-varietal bottlings of Rhône grapes and Zinfandel, aiming for wines that read as a genuine expression of the estate rather than a winemaker’s signature style. It’s a philosophy closer to old-world restraint than the bigger, riper style some Paso reds are known for.
Unlike CaliPaso and Lone Madrone, you don’t need to drive out to the vineyard to taste Seven Oxen’s wines — their tasting room is in downtown Paso Robles at 1244 Pine St, making it an easy add to a walking day. Hours run Monday and Thursday through Saturday, closed Tuesday and Wednesday; check ahead before you plan around it.

These wineries don’t share a geography, a grape variety, or a price point. What they share is a willingness to build something specific rather than something safe. CaliPaso bet on overnight hospitality when most Paso Robles wineries were tasting-room-only operations.
