The 3-Day Paso Robles Itinerary For When You Have More Time

Most first-timers squeeze Paso Robles into a weekend — and it works. But three days lets you do something a two-day trip can’t: experience the full geographic range of a region where the Westside and Eastside feel like different wine countries entirely.

This paso robles wine itinerary covers downtown’s walkable tasting rooms, Tin City’s industrial-chic producers, the rugged Adelaida hills, the sun-drenched Eastside, and a coastal detour that most visitors never think to make. By the end, you’ll understand why people who visit once keep coming back.

Before You Go: Planning Essentials
Paso Robles sits roughly halfway between Los Angeles and San Francisco on the 101 freeway — about a four-hour drive from either direction. That makes a three-day trip realistic as a long weekend (arrive Thursday evening, leave Sunday afternoon) or a midweek escape when tasting rooms are quieter and reservations are easier to secure.

Where to Stay
For a three-day trip, pick a base near downtown and keep it for all three nights. You’ll be driving to different parts of the region each day, but downtown puts you within 20–30 minutes of every stop on this itinerary — and walking distance from dinner every night.

Adelaide Inn is a locally owned standby with genuinely friendly staff and surprisingly lush grounds for the price. River Lodge offers retro-chic rooms and a Cal-Italian restaurant with a poolside cocktail bar — useful after a long day of tasting. For a more immersive stay, Allegretto Vineyard Resort sits among 20 acres of vineyards and orchards ten minutes outside town.

Hope On Park

Day 1: Downtown Paso Robles & Tin City

Start in the heart of downtown, where more than a dozen tasting rooms cluster within a six-block walkable radius centered on 12th Street. The pace here is relaxed, the pours are generous, and you can move between stops without thinking about driving. Plan for two or three tasting rooms before lunch — quality over quantity makes the whole day feel luxurious rather than rushed.

Hope on Park

The Hope Family’s downtown tasting room on Pine Street is one of the most polished walk-in experiences in Paso. The Sidewalk Bar ($25, no reservations needed) lets you sample the Austin Hope and Treana portfolios in a casual outdoor setting, while the Creative Space ($75, reservations required) offers a deeper, guided experience — including The Aromatic Tasting, which uses scent and sensory exercises to change how you think about wine. You likely already know Austin Hope from your local wine shop; tasting the estate expressions here, where the wines were designed to be poured, is a different experience entirely.

Hoyt Family Vineyards

Carol Hoyt went from Hollywood to Malibu to Paso Robles, making her first wine in a home kitchen with her toddler in tow. Now she and her husband Stephen farm Hoyt Family Vineyards, a 150-acre Westside ranch in the Willow Creek District and pour from a cozy downtown tasting room on Park Street. The wines — Tempranillo, Cabernet, Grenache, Petite Sirah, and a Viognier worth seeking out — are small-lot and personal. The downtown room has a laid-back, living-room energy that makes it easy to linger, and the Thursday–Saturday evening hours (until 8 PM) give you a tasting option that most downtown rooms don’t.

CaliPaso Winery

CaliPaso operates a downtown tasting room on 13th Street with some of the most generous evening hours in the district — open until 9:30 PM Thursday through Saturday. The wines lean toward bold, approachable reds, and the relaxed atmosphere makes this a natural transition point between afternoon tasting and dinner. CaliPaso also runs a villa and estate winery on Buena Vista Drive outside town — seven themed rooms on a working vineyard — if you’re looking for a lodging upgrade later in the trip.

Fish Gaucho

Eat before Tin City. Fish Gaucho serves fresh, Latin-inspired seafood with excellent ceviche — lighter than you’d expect from a wine country lunch, which is exactly what you want before an afternoon of tasting. Pappy McGregor’s is the lively, no-pretension option with solid pub food. For something more refined, Cello Ristorante & Bar offers garden-fresh cuisine with local wine pairings — book ahead.

Afternoon: Tin City

Drive five minutes south to Tin City, the industrial district that has become one of Paso’s most exciting tasting destinations. Originally a cluster of warehouses and light-industrial spaces, Tin City now houses more than 25 small producers — winemakers, distillers, cideries, and a handful of food makers — all within a compact, walkable footprint. The energy here is different from downtown: younger, more experimental, less polished, and entirely intentional about it.

ONX Wines — Tin City Tasting Room

ONX Wines operates their main tasting room right in Tin City at 2910 Limestone Way. The certified sustainable estate produces some of Paso’s most compelling Rhône-style wines — GSM blends, single-vineyard Syrahs, and white Rhône wines like Viognier and Roussanne that are worth asking about. Towering redwoods shade the patio, and a small planting of estate Syrah outside the door connects you to the Willow Creek vineyard up the road. The Current Release Tasting ($25, plan for about 75 minutes) is waived with a two-bottle purchase or Collective Club enrollment. Open daily 10 AM – 5 PM.

Side Quest — Kiler Canyon Vineyard: If ONX captures your attention (and it will), ask about visiting the Kiler Canyon estate vineyard in the Willow Creek District, about 15 minutes from Tin City. The Discovery Tour and Picnic brings you to the property for an off-road vineyard tour through steep hillside plantings, followed by gourmet tapas and wine with panoramic views. The guided 90-minute estate tastings ($35/person) and artisanal food-and-wine pairings are available by reservation Friday through Sunday. The Clark House and Kiler Canyon Ranch House lodging properties are on the estate too — worth knowing if you want to sleep among the vines.

Beyond ONX, pick one or two more spots and let yourself wander. The beauty of Tin City is the accidental discovery — the tasting room you duck into because someone walking out says “you have to try their Grenache.” Don’t over-plan this part.

Local Tip: Tin City can get warm in the afternoon. Bring a hat, grab water between stops, and save the outdoor-seating spots for later in the day when the sun drops.

Dinner

Head back downtown for dinner. Eleven Twenty-Two Speakeasy is worth a visit for craft cocktails in a candlelit 1930s atmosphere — a nice palate reset after a full day of wine.

Day 2: The Westside — Adelaida District & El Pomar

The Westside of Paso Robles — particularly the Adelaida District — produces wines that regularly appear in national “best of” lists. Higher elevations (up to 1,800 feet), limestone-rich soils, and a marine influence through the Templeton Gap create conditions that favor bold Cabernets, structured Rhône blends, and genuine dry farming. The drive alone is worth the trip: the landscape shifts from open grassland to dense oak woodland as you climb Adelaida Road.

Morning: Adelaida Road
Head west on Adelaida Road from downtown. The drive takes about 20 minutes to reach the first cluster of wineries, and the scenery unfolds gradually — rolling hills, scattered oaks, vineyards carved into steep terrain.

Brecon Estate

Brecon Estate is a Westside benchmark. Their estate wines — particularly the Cabernet Sauvignon and Bordeaux-style blends — have earned some of the highest scores in the region, including a 100-point rating that put them on the national map. The tasting experience is focused and personal; you’re tasting with people who grew the grapes and made the wine. The views from the estate are among the best in Paso.

Grosso Kresser Vineyard

On Vineyard Drive overlooking the Adelaida District, Grosso Kresser Estate farms fourteen acres of 50-year-old vines across twenty-two acres of sloping hillside. Founded by Karl Kresser and Juliane Grosso in 2012, this is a winery that takes patience seriously: every red wine spends a minimum of three years in barrel and another year in bottle before release. The result is Cabernet Sauvignon and Bordeaux-style blends with a depth and polish that punch well above the estate’s small production. The newly remodeled tasting room offers panoramic valley views — bring a camera.

Lunch:

The Westside has fewer dining options than downtown, so plan ahead. Pack a picnic and eat at one of the wineries with outdoor seating (like Brecon Estate); several Westside tasting rooms are happy to accommodate guests who bring food.

Afternoon: Templeton Gap & El Pomar (2 – 4:30 PM)

Head south from Adelaida Road toward the Templeton Gap — the geographic break in the Santa Lucia Range that funnels cool ocean air inland. This corridor is responsible for some of Paso’s most interesting temperature swings: vineyards here can see a 50-degree difference between day and night, which preserves acidity in the grapes and gives the wines a brightness you don’t always find on the warmer Eastside.

Bovino Cellars

Bovino Cellars sits in the El Pomar District within the Templeton Gap — a certified organic estate that farms sustainably on Westside soils. The wines are expressive and site-driven, and the setting is beautiful enough that you may find yourself lingering longer than planned.

Bella Luna Estate

Bella Luna Estate Winery

End Day 2 at Bella Luna Estate Winery on Templeton Road, right in the heart of the Templeton Gap. This small, family-owned estate has been producing terroir-driven wines for over 23 years with a no-additive philosophy that sets it apart: indigenous yeasts from the vineyard, unfined, unfiltered, and largely dry-farmed. The Italian-inspired portfolio — Sangiovese, Nebbiolo, Barbera, Dolcetto — gives you something genuinely different from the Cabernets and Rhône blends you’ve been tasting all day. They also produce excellent Chenin Blanc, Sauvignon Blanc, and Zinfandel. The tasting fee is waived with a two-bottle purchase, which makes this an easy place to stock up on wines you won’t find elsewhere.

Dinner

Return to downtown. After a day in the hills, something grounding works well — try one of the farm-to-table options listed in our dining guide.

Day 3: Eastside Classics & Coastal Finish

If the Westside is Paso’s dramatic, cool-climate showpiece, the Eastside is where the region built its reputation. Warmer temperatures, flatter terrain, and well-drained alluvial soils produce ripe, approachable wines — particularly Cabernet Sauvignon, Zinfandel, and Merlot. Many of Paso’s pioneering wineries planted here first, and the Eastside remains the heart of the region’s Cabernet identity.

Morning: Eastside Estates
Drive east on Highway 46 from downtown — the Eastside wineries begin within 10 minutes.

Eberle Winery

Start at Eberle Winery, one of the founding estates of the modern Paso Robles wine industry. Gary Eberle planted some of the region’s first Cabernet Sauvignon vines in the early 1970s when most people here were still growing Zinfandel. The cave system beneath the property is the oldest in the region — book the VIP Cave Tour and Tasting ($60/person) if you want the full experience, including a seated tasting with artisan cheese in the cave grotto. Even the standard tasting gives you a direct connection to Paso’s history.

Pear Valley Vineyard

Nearby on Union Road, Pear Valley is a family-owned estate with 360-degree views of the Paso Robles countryside. The Tuscan-style tasting room feels distinctly Eastside — warm, open, unhurried. Their red blends and estate wines are well-priced and crowd-pleasing, making this a good stop if you’re buying bottles to bring home.

Cass Café + Tasting Room

Cass Winery

Cass Winery on Linne Road combines a working vineyard with an on-site restaurant — one of the few in Paso where you can pair the winery’s own wines with a full meal, not just crackers and cheese. If your morning starts early enough, consider doing the Camp CASS Archery Class ($65/person, Friday–Sunday) before lunch — it’s a surprisingly fun way to break up a day of tasting.

Midday: Lunch at Cass

Cass Winery’s restaurant is the natural lunch option here — the food is designed to pair with their wines, and eating among the vines is one of those Paso experiences that photographs don’t quite capture. If you’d rather keep moving, there’s a market in Templeton on the way south to your next stop.

Afternoon: Santa Margarita & the Coast

Head south on the 101 for about 20 minutes to Santa Margarita, a small town that sits at the edge of Paso Robles wine country and the beginning of something altogether different.

Ancient Peaks

Ancient Peaks farms Margarita Vineyard — one of the most geologically significant vineyard sites in California. The property sits on a 14,000-acre ranch that includes a working cattle operation, and the vineyard itself spans from rolling valley floor to steep hillsides where marine fossils still turn up in the soil. The Vineyard Tour ($50/person, reservations required) is one of the best educational experiences in the region: a two-hour ride through the property with a tasting room educator, followed by a complimentary tasting at the café.

Even without the tour, the tasting room and café are worth the detour. The wines are excellent values — well-made, cleanly varietal, and priced below what most producers of this quality charge.

Absolution Cellars — Morro Bay

Here’s the detour most visitors don’t know about. From Santa Margarita, it’s a 30-minute drive west to Morro Bay, where Absolution Cellars operates a waterside tasting lounge on the Embarcadero. The wines are Paso Robles fruit — the same vineyards you’ve been driving past for two days — but the setting is completely different: ocean air, harbor views, the iconic Morro Rock in the background.

This coastal finish transforms the end of your trip from “one more tasting room” into something memorable. The Classic tasting ($25, walk-ins welcome) pours six award-winning wines, and the outdoor seating catches the late-afternoon light beautifully. If you’re driving south toward LA or San Luis Obispo afterward, Morro Bay is directly on your route.

Local Tip: Morro Bay is also an excellent overnight option if you want to extend the trip by a night. The coastal fog and seafood make a striking contrast to the warm inland wine country you’ve been in for two days.

Make It A Long Weekend

Making the Most of Three Days

Pace Yourself
Three to four tasting rooms per day is the sweet spot. More than that and you lose the ability to actually taste what you’re drinking. The best tasting experiences happen when you’re present enough to ask questions, notice differences between wines, and remember what you liked.

Alternate Wine and Non-Wine Stops
The coast detour on Day 3 is built into this itinerary for a reason — it gives your palate and your attention span a reset. On Days 1 and 2, mixing in a meal, a walk through downtown, or a vineyard tour (rather than just another flight) keeps the trip from blurring into one long tasting.

Buy Direct
Many of the wineries on this itinerary produce under 2,000 cases per year. Their wines aren’t available in retail stores. If you taste something you love, buy it there — you likely won’t find it again. Most tasting rooms will ship to your home if you don’t want to drive with bottles in the trunk.

Check Before You Go
Hours, tasting fees, and reservation policies change. This itinerary provides the structure; the specific details should be confirmed directly with each winery before your trip. A two-minute check of their website the week before saves a frustrating closed door on arrival.

What to Book Ahead
Reserve tastings at least 24 hours in advance, especially for Fridays and Saturdays. Most tasting rooms welcome walk-ins on weekdays, but a quick call or online booking guarantees a more relaxed experience. Cave tours and vineyard experiences (like those on Day 3) sell out — book those a week ahead. If you’re traveling with a group of six or more, reservations are almost always required.

Transportation Note
You’ll need a car for Days 2 and 3. If you’d rather not drive after tasting, Breakaway Tours and Central Coast Transportation both offer private guided tours that can follow this itinerary’s route — or build a custom one based on your preferences.
