Welcome to Paso Robles Wine Country, where we squeeze the juice from every 24 hours. Sure, we may know a thing or two about savoring the moment, but that doesn’t mean we’re into stuffy, black tie affairs. All you need to uncork the elegance of Paso is some good conversation, a bit of sunny weather and these wines in your a glass!
Dubost 2019 Sparkling Rose Method Ancestral Grenache Pet Nat
It sparkles, naturally! What could be more celebratory than bubbles under the nose? This Dubost blushing sparkling wine is full of effervescence and boundless possibilities. Serve this wine with brunch, lunch or dinner with festive results, no matter the day. Not sure what a “pet nat” is? (short for the French ‘pétillant naturel’ meaning’natural sparkling’), this indicates wines crafted according to the French ancestral method. Developed in the 16th century, this is the oldest way of making sparkling wine, where the fermenting juice is bottled while the yeast is still consuming the grape sugars. This results in—yes, you guessed it—bubbles on bubbles on bubbles!

Chronic Cellars 2016 Tranquilo Late Harvest Petite Sirah
Life of the party: The glass is always half full when you savor Chronic Cellars celebrated 2016 Tranquilo, a real crowd pleaser known for its bag of party tricks. In fact, this 100% late harvest petite sirah port-style wine is known to be a bit of a show-off, with rich plum, blueberry and blackberry vibes that get the party going and conversation flowing. Sure, it’s on the sweeter side, but not at all cloying (you’d be wise to pair it with strong, sharp cheese for optimal wow factor). With soft tannins and hints of playful cinnamon and spice, each sip leads you deeper into a world of rollicking ripe fun. Let the good times roll.

Eberle Winery 2010 Reserve Estate Cabernet Sauvignon Magnum
Bigger is better: This magnum-sized cab is not for the faint of heart! Eberle’s estate reserve cabernet sauvignon represents the “best of the best” of Eberle’s premium wine barrels, with each lot cherry picked and tagged for what might be a grape’s highest honor. Of course, a wine bottle of this size and stature should only be opened when you can share it with those you love (which is enough cause to celebrate for us). Aged for twenty-four months in French oak, then aged in bottle for an additional three years, the rich, luxurious flavor is truly something your tribe will still be talking about until you can all gather again!

Oso Libre 2020 Volado Viognier
Golden opportunity: Light, bright and full of perky Paso sunshine, this cheers-worthy Oso Libre viognier is a breath of fresh air that turns any hour into a “happy” one. Crafted from 100% estate grown viognier, the wine is floral, crisp and aged in neutral barrels. The result? All that juicy flavor is able to shine through with ease. Although this is certainly a glass you can enjoy all on it’s own (preferably with a gorgeous vineyard view) you can also pour it alongside fish, pasta and roasted chicken for the perfect weeknight win. Go on: pour springtime in a glass and toast to the season ahead!

Parrish Family Vineyard 2018 Zinfandel
Three cheers for family: Celebrate Paso’s family-owned heritage when you uncork this lovely classic zinfandel, made in memory of “grandfather Earl.” As the lore goes, the late Parrish Family Vineyard winemaker planted zinfandel in Atascadero (just north of Paso Robles) way in way back in the 1920s. In fact, plantings were sourced from the Paderewski Vineyard, one of the first places this exciting varietal popped up in California. With notes of pomegranate, tart bing cherries, pink peppercorns, and a palate bursting with stately walnut and blueberries, this zin represents the best of Paso’s past, present and future. From our family to yours, we give you permission to take a little time to linger over dinner.
