Cannonball! Beat the heat and break out the chilled white wine. The return of triple digit weather means finding refreshingly new and delicious ways to cool off. Well, in Paso Robles Wine Country, that is! Here, our summer mantra is all about hydration, relaxation and experimentation. Alternate between cold ice water and these unique, crisp whites for a cool wave of flavor that beckons for one last sip. Still feeling hot-headed? Take a dip in the pool! In Paso Robles, there’s no shortage of ways to hit the “refresh” button on your socially distant summer vacation.
1. Try them all at Brecon Estate
Why would you ever choose just one? Known for crafting crisp, refreshing whites that are both food friendly and fruit forward, Brecon Estate is full of sumptuous summer surprises. The winery’s amazing Summer Six Pack Special is a tall drink of yum wrapped up in one distinctly Paso Robles package. Enjoy two 2019 Brecon Estate 2019 Albarino offerings, two Rosé offerings and two bottles of the winery’s True Acacia Head Albarino, bursting with tart grapefruit grandeur. Spice up your summer barbecue and keep those fresh flavors in rotation!

Brecon Estate is currently open from 11 a.m. to 5 p.m. by appointment. For more information, call (805) 239-2200.

2. Celebrate anything at Cass Winery
All bubbles, no troubles. Why not just celebrate the day, whatever it happens to be? Pop the cork and kick back at the Cass Winery patio, a hot weather hangout perfect for sipping away the afternoon in style. Nosh on chef-crafted plates paired with our new summer love: Cass Winery’s 2018 Sparkling Viognier. With floral notes and tiny, delicate bubbles that tickle the nose, expect a dry citrus finish that simply cries out for zesty crab cakes. Luckily, the tasting room has those, too! You’re in good hands, my friend.

Cass Winery is open Sunday through Monday from 11 a.m. to 5 p.m. For more information, call (805) 239-1730.

3. Find your French at Écluse
What’s “French” for “chill vibes?” Allow us to translate, one sip at a time. Just head to Écluse, where limited production, handcrafted bottles exude a certain je ne sais quoi. The winery’s 2017 Chardonnay is no exception to the rule. Aged for 14 months both in stainless steel and French oak to produce a crisp yet complex flavor profile, you’ll get a hint of that classic creaminess cut with a healthy dose of sunny acidity. How’s that for effortless chic in a glass?
Splash in!
The Écluse tasting room is open for tasting this Fourth of July weekend by appointment, and if you cannot make it, you can purchase bottles from their web store. Check back with the tasting room for updates on future weekends that they are open by emailing [email protected].

4. Stretch out at Four Lanterns Winery
You promised yourself you’d tackle that summer reading list. Here’s a novel idea: Sprawl out on the lush, green lawn at Four Lanterns Winery and enjoy a socially distant picnic with your favorite book (and perhaps your favorite pod-mate). Whatever you do, be sure to bask in the winery’s best and brightest whites, including Four Lantern’s 2018 Apricity Rhone Blend and 2017 Lamplight Viognier. Both Rhone offerings are golden and unforgettable (not unlike a famous Paso Robles sunset).

Four Lanterns Winery is open by appointment. For more information, call (805) 226-5955.

5. Iron Oaks Winery
Remember eggs Benedict? The wise folks at Iron Oaks Winery want to remind you to brunch it up this summer. Whether you toast over pancakes through Zoom or prepare a spread of smoked salmon in the backyard, make room in your schedule for a long leisurely breakfast that turns into a late, great lunch. In Paso Robles Wine Country, temps begin to soar just past 11 a.m. Give your Sunday tradition a splash of flirty refreshment with Iron Oaks Wild as You Rosé dripping with watermelon and guava goodness. Next up: a luxurious summer siesta. Last one to the hammock is a rotten egg!
Splash in!
Iron Oaks Winery is open Sunday through Thursday from noon to 8 p.m. and Friday and Saturday from noon to 9 p.m. For more information, call (805) 257-8041.
