Take the bull by the horns this spring and head to Anarchy Wine Company’s Tasting Room in Paso Robles, where the rock music is loud, the style is bold and the wine is unlike anything you’ve ever tasted before. The winery’s 2017 Tao Del Toro is as fiery and stunning as a famous Paso Robles sunset. A mix of unruly Spanish Tempranillo and luxurious Cabernet Sauvignon, this rebellious blend pairs perfectly with a picnic spread of alluring cheeses, olives and charcuterie.

2. Unleash the Wines of the West
Why settle for one when you can try a whole stampede? Conveniently located on Highway 46 West in the heart of Paso Robles wine country, Wines of the West offers unique hand-crafted wines from four local producers, including Clayhouse and Purple Cowboy wine flights (while the adjacent CANtina Lounge pours Alloy Wine Works and If You See Kay “canned wine” selections). With two distinctive tasting experiences, there’s a wine for every mood. This spring, splash into a rosé brimming with fun personality to spare. With a salmon pink color, aromas of white flower and flavors of watermelon and fresh tart cranberries, Purple Cowboy’s 2018 rosé is dry, lively and crisp, with a delicately sweet finish.

Surrounded by a breathtaking topiary and sculpture garden, Sculpterra Winery is a dream setting to celebrate the first blush of spring in Paso Robles. Sip delicious wines while admiring towering statues carved into everything from a puma to a wild mammoth. This spring, be sure to try the winery’s 2018 Chardonnay, a classic expression of the varietal bursting with rich aromas of sandalwood, orange peel and even French toast.

4. Find your inner harmony
Cruise west on Highway 46 and you’ll feel the ocean breeze tickle your skin. Is there anything more refreshing? Just a few miles from downtown Paso Robles, you’ll find a coastal oasis atop a storybook hill. Yes, we’re talking about Harmony Cellars, perched above the nearby village of Harmony (population 18, if you count the cows). With a range of fabulous wines to sample and fun-loving events—like their March 14 St. Patrick’s Day shindig featuring live Irish music and food from noon to 4 p.m.–you’ll never want this fairytale to end! Our advice: Pick up a few bottles to remember this magical afternoon by (for spring soirees, we love their 2018 White Riesling, featuring a lively bouquet of honeysuckle and stone fruit).

5. Relax on the lawn
When is the last time you lounged on fresh, springy grass and looked up at the sky? Four Lanterns Winery’s sprawling green lawn is the perfect locale for lallygagging, laughing and throwing the frisbee for Fido. Sample a rainbow of bright acid driven wines, including the winery’s 2018 Rosso de Passo, a bright, juicy and fun red that’s light and zesty enough to keep you seeking sip after sip. Have a big group trip in mind? Stay in the vacation house, surrounded by vines and featuring spacious suites, a family room, kitchen, dining room, pool and Santa Maria grill (accommodates three couples or two families). Of course, you can also just stay for the afternoon—not a bad way to while away a spring day in Paso!
