A rainy winter season doesn’t just mean healthy, happy vines come spring. If you’ve spent any time on the Central Coast in the past few weeks, you know that the poppies and mustard are (very) happy too. California’s 2019 Super Bloom is a sight to behold—some fields of wildflowers are so vibrant and vast that they are even visible from space. Thousands of brightly colored blooms have exploded into full splendor, turning green hillsides into a technicolor dream. While you can see this rainbow with your own eyes by visiting popular Super Bloom sightseeing stops like the nearby Carrizo Plain National Monument, we encourage you to also open up your senses to these bright, floral delights bursting from local barrels, too. Think of the following fresh spring Paso Robles Wine recommendations as a Super Bloom for your glass!
1. Écluse Wines 2015 Prelude White Rhone Blend
This complex Rhone style blend is truly a natural wonder. The beautiful golden straw color and aromas of stone fruit and orange blossom are sure to lure you in (not unlike a field of poppies) and continue on the palate along with notes of zesty citrus. Enjoy it perfectly chilled on a warm spring day or pair with a goat cheese and pear salad. Note: Check out Écluse Winery’s new tasting room hours, Thursday through Sunday 11 a.m. to 4 p.m.
2. Dubost Vineyard and Winery’s 2017 Rosé
Dubost’s 100% Grenache is as eye-catching as it is sumptuous. With a striking salmon color, raspberry and strawberry on the nose, and a crisp refreshing acidity going down, this chilled blush is ready for picnics laden with jam, nuts, and prosciutto. Flower crown not included.
3. Eberle Winery 2018 Côtes-du-Rôbles Rosé
Eberle’s 2018 Côtes-du-Rôbles Rosé is enticing, yet shows restraint. A blend of 52% Grenache, 44% Syrah, and 4% Viognier, the vibrant pink color leads your nose and mouth to the glass where aromas and flavors of tropical fruits, strawberries and a hint of pink grapefruit leap out of the glass. Watch out. You may need to wear shades for this one.

4. Hoyt Family Vineyards 2017 Pinot Noir Rosé
“Sophisticated and elegant” best describes Hoyt’s estate Grown Pinot Noir Rose, a plush ruby color reminiscent of Valentine’s Day bouquets. This flirtatious wine is indeed turning heads and making a splash, claiming 99 points, double gold and best of class from the California State Fair! Notes of strawberry and citrus lend an crowd-pleasing allure. Spring fling, anyone?
5. Hearst Ranch Winery 2017 White Wine “Three Sisters Cuvee”
Could there be a Paso Robles white wine with a fresher feeling? A stunning composition of sunny aromas and flavors suggest not. Aromatics of fresh-cut grass and clean minerality come together with fantastic acidity in this fab Hearst Ranch Cuvee. Hints of medium toasted oak and flavors of lychee, gooseberry and apricot are a delight on the palate. Better than dancing through the sprinklers on your front lawn? Almost!
