You may already know that there is a big distinction between Champagne and other sparkling wines. But while all Champagne is “sparkling wine,” the reverse is not true. Champagne, protected by strict appellation laws, must come from the eponymous region in France and adhere to specific production methods and grape varieties. 

However, this distinction should not diminish the quality and excitement found in sparkling wines from other regions. Paso Robles winemakers, unburdened by centuries-old traditions, are free to innovate, resulting in sparkling wines that challenge and expand our understanding of what’s possible in the world of bubbles.

Historically, California’s foray into quality sparkling wine production began in 1892 with the Korbel brothers in Sonoma County. Today, Paso Robles is writing its own chapter in this effervescent story, leveraging its unique climate and varietals to create wines that are both a nod to tradition and a bold step into the future.

Sparkling Wine Methods in Paso Robles

The sparkling wine methods employed in Paso Robles vary, from the labor-intensive méthode traditionnelle (identical to the méthode champenoise used in Champagne) to the more modern Charmat method. Paso Robles winemakers employ various methods to craft their sparkling wines, each producing distinct characteristics:

Méthode Traditionnelle
Identical to Champagne’s method, secondary fermentation occurs in the bottle. The wine ages on lees, developing complex brioche and nutty notes with a creamy texture. Labor-intensive and often pricier, but yields high-quality results.

Charmat Method
Secondary fermentation happens in large pressurized tanks. This process creates lighter, more fruit-forward sparkling wines that are ready to enjoy sooner. It’s faster and more cost-effective than the traditional method.

Transfer Method
Combines aspects of both traditional and Charmat methods. The wine undergoes bottle fermentation and lees aging, then is transferred to tanks for filtering. This maintains complexity while streamlining production.

Robert Hall Winery

Rava Wines

Rava Wines excels in sparklings, which shouldn’t come as a surprise to Paso Robles wine lovers. After all, Rava Wines is the region’s first winery dedicated to méthode champenoise, and has the bottles to prove it. 

With a diverse bubbly selection including sparkling riesling and muscat, Rava Wines Sparkling Pinot Blanc/Meunier stands out with lemon zest acidity from Pinot Blanc and tannin texture from Pinot Meunier, enhanced by a final touch of oak-aged brandy for a rich, elegant finish. Bianchi Winery

With a tasting room that overlooks serene ponds and lush vineyards, Bianchi Winery provides a tranquil setting to enjoy fine wines and exquisite bubbles. Kick off your next Bianchi wine tasting with Bianchi Winery’s Signature Sparkling, a great precursor to the more robust whites and reds to follow. Distinctive sparkling notes of fresh tangerine, melon, apples and pears are sure to get the party started, followed by a slightly sweet finish that softly hints at toasted sugared nuts. Halter Ranch

Halter Ranch Winery offers more than just a tasting experience—it’s an immersion into the essence of Paso Robles terroir. This 2,700-acre estate is a testament to sustainable farming and biodiversity, where award-winning organic wines are born from the very land you stand on. 

Sip sunshine in a glass with Halter Ranch’s 2020 Libelle Sparkling Picpoul Blanc, an effervescent gem from Halter Ranch’s sun-drenched vineyards. Crafted with meticulous care using the traditional methode Champenoise, this 100% Picpoul Blanc sparkler is one of the region’s finest. As you pop the cork, aromas of tropical pineapple and zesty lime whisk you away to a slower pace of life. The first sip bursts with the freshness of a Pacific mist, revealing layers of lemon, exotic guava, and crisp pear. It’s a lively celebration in every bubble, perfectly balanced and utterly awe-inspiring – just like a Paso Robles sunset! Pair with briny oysters fresh from Morro Bay, or let it shine alongside a spread of artisanal Central Coast cheeses.

Hayseed + Housdon

Ready for a chill rush? Hayseed + Housdon’s intimate downtown Paso Robles tasting room provides the perfect backdrop for a much-deserved bubbles break. The winery’s regular lineup of reds and whites are certainly something to write home about.

But Hayseed’s sumptuous sparklings are true cause for celebration. Radiating with a golden hue and delicate bubbles, Hayseed and Housdon’s 2019 Brut Cuvee features lovely depth and richness while maintaining a crisp, clean finish—a little like magic in a bottle. Share with friends, both human and four-legged (the tasting room is proudly dog-friendly).

Sculpterra Winery and Sculpture Garden

Sculpterra Winery and Sculpture Garden in Paso Robles is a dreamlike experience, blending art and viticulture seamlessly. Known for their diverse range of wines, their must-try debut Sparkling Wine is made from 100% French Colombard sourced from Central California’s coastal regions. 

Enjoy bouquets of toasted hazelnut, bread crust and classic stone fruit contrasted with a satisfying crispness. Trust us: It’s even better while strolling along the winery’s breathtaking sculpture garden, where larger-than-life art pieces create an enchanting storybook backdrop.

Chronic Cellars

Celebrated for its vibrant and quirky approach to winemaking, Chronic Cellars is Paso Robles’ answer to over-serious wine tasting pomp. That said, the quality of their wine is higher than most—as exemplified in their popular Spritz and Giggles sparkling offering. A blend primarily of Pinot Noir and Chardonnay sourced from select vineyards along California’s north coast, it offers aromas of pears, cut apples, fresh baked bread, light spices and floral fancy.

Known for fun and colorful labels, Chronic Cellars invites all to rediscover just what makes them giggle. Savor this sparkler while enjoying a picnic or lawn game for maximum joy.

Le Vigne Winery

Le Vigne Winery’s offerings are always a cut above the fizz. Sample the popular Paso Robles producer’s 2020 Estate Isabella Blanc de Noir Sparkling, crafted using the traditional Methode Champenoise inspired by Le Ligne’s successful Rosé of Sangiovese. This delicate, effervescent Sangiovese sparkler offers aromas of peach and crème fraiche, complemented by a light doughy mousse. Revel in notes of tamarind and macadamia, balanced by crisp acidity and a silky mouthfeel. Plus, the winery’s onsite cheese and charcuterie pairings transform each sparkling moment into a gourmet adventure.

Vina Robles Vineyards & Winery

Vina Robles Vineyards & Winery presents tasters with two exceptional sparkling wines made in the méthode traditionnelle style. Enjoy a classic, non-vintage Brut blend of Chardonnay and Pinot Noir, or a romantic Brut Rosé made entirely from Pinot Noir. The latter is rich in complexity with floral and berry aromas, elevated by flavors of cherry, raspberry, and strawberry, finishing with a crisp, zesty and slightly creamy touch. Yum! The winery’s European-inspired hospitality and expansive amphitheater further enhance the love affair.

Opolo Vineyards

Known for powerful reds, Opolo Vineyards‘ venture into sparkling wines showcase a fun and fizzy counterpart. A refreshing light golden wine with pronounced bubbles, Opolo Sparkling Brut features effervescent notes of peach and apple, perfect for poolside afternoons and vineyard strolls. 

Made entirely from French Colombard grapes using the Méthod Charmat technique, this sparkler undergoes a cold secondary fermentation in stainless tanks before being bottled under pressure.
