5 Wine Phrases You May Not Know (But Should)

So you want to learn more about Paso Robles wine (and winemaking). We salute you! However, it can feel like a never-ending task, can’t it? Once you learn one term—say, phenolics—you’re tasked with learning an entirely new concept altogether. The search for wine knowledge never truly ends, which is why so many wine aficionados find the journey so fascinating and rewarding. Don’t be discouraged! Learning is all the fun. So, pull up a chair and take some notes. Here are 5 winemaking terms you may not know, but totally should. Now you can add them to your vocabulary (and maybe even teach someone else a thing or two).

1. Malolactic Fermentation

Pass the butter, please. Malolactic fermentation (also known as malolactic conversion or MLF) is a process in winemaking in which tart-tasting malic acid, naturally present in grape must, is converted to softer-tasting lactic acid. Malolactic fermentation is most often performed as a secondary fermentation shortly after the end of the primary fermentation, but can sometimes run concurrently with it. The process is standard for most red wine production and common for some white grape varieties such as Chardonnay, where it can impart a “buttery” flavor from diacetyl, a byproduct of the reaction. Now you know why that wine is so lip-smacking good!

Tooth and Nail’s Amor Fati 2015 Chardonnay showcases the creamy, buttery charm you’ve come to associate with malolactic fermentation. Golden wheat in color, the nose and palate are equally voluptuous and enticing, featuring notes of oatmeal cookie, Asian pear, peach, butter on fresh baked bread, caramel corn, and apricot.

2. Free Run Juice

Freedom is a beautiful thing, isn’t it? This term describes the juice that flows freely from the skin of grapes before they are pressed. The natural weight of the grapes, when stacked on each other, tends to release an initial dibble of juice (this is the good stuff). Because this juice is not pressed, it contains  fewer tannins, making it less bitter and generally of higher quality. Perhaps this is why some winemakers call it “the noble juice!” French winemakers generally specify the types of wine made from noble juice (they call it vin de goutte and the resulting wine is called vin de presse). Not all wines are specifically one or the other. Free-run juice and pressed juice may be combined, with the noble juice allowing for a reduction in tannins in the wine.

3. Whole Cluster Fermentation

Yep, it’s the whole enchilada. The rise of mechanical de-stemming has been great—it means modern winemakers can ferment their fruit without pesky stems getting in the way. However, many winemakers are now looking back longingly at those old, rustic days (as difficult as they were). Winemakers who use whole cluster fermentation believe that allowing the fruit—plus some stems and foliage—into the winemaking process offers potentially delicious results. You may not know this, but the grape stems have an impact on the wine itself. Stems abound in phenolic compounds, particularly tannins. Going “whole hog” is known to add spice, structure, black tea flavors or even a more dynamic expression of site specificity.

Stems and all: Jada’s popular 2013 Hell’s Kitchen GSM blend features a mix of whole cluster and de-stemmed fruit (8% of the Syrah, 100% of the Mourvedre and 50% of the Grenache was fermented whole cluster). 4. Botrytis

Hard to say, easy to drink. “Botrytis” is a fungus that can attack the buds, flowers, leaves and stems of a vine, but it’s not necessarily a bad thing for the grapes. Surprising, right? One particular strain of the fungus, a beneficial gray mold, pierces the skin of grapes and causes dehydration, resulting in natural grape juice exceptionally high in sugar. If the grape is wet, this can be dangerous and even lethal. However, if the grapes stay dry, this funky fungus can make ever more yummy results. Believe it or not, but botrytis is largely responsible for the world’s finest dessert wines. That’s why many winemakers call this particular mold “the noble rot.” Winemakers sure like to call things “noble,” am I right?

5. Vitis Vinifera

You can call her the mother of all vines. Many scientists believe that most of humanity sprang to life from a single place: Africa. This begs the question, where did the first wine grape vines’ ancient roots spring from? Well, thanks to hardworking researchers, we now know the answer. Vitis vinifera, a.k.athe common grape vine,” is a species of Vitis, native to the Mediterranean region, central Europe, and southwestern Asia, from Morocco and Portugal north to southern Germany and east to northern Iran. Scientists believe that 99 percent of the world’s wine grapes (regardless of varietal) first came from this iconic species. Pay your respect by knowing (and honoring) her name!

Respect your elders: They may not have the oldest wine in Paso Robles, but they are considered one of the oldest (if not the oldest) winery in Northern San Luis Obispo County. Rotta’s rich history begins back in 1856, when Adolph Siot, a French immigrant, planted the first wine grapes and built the first winery in Templeton. 5 Paso Wine Words That Will Make You Say WHAT?

We swear, it’s not what it sounds like! These brow-raising wine terms may sound ridiculous, funny or downright absurd, but we assure you they do cross the lips of many a Paso Robles winemaker. We’re mature enough not to giggle when we hear these phrases uttered on a tour of the barrel-room (well, sometimes), but perhaps you will let out a guffaw (we don’t blame you). Don’t be alarmed. We assure you, there is a very good explanation for our brash tone. Plus, it’s TSFW (totally safe for work).

1. “Bung Hole”

Say what? Your mind may race to 1990s MTV cartoon slackers Beavis and Butthead (and their annoying yet infectious chortles), but we can promise you (pinkie swear) that Paso Robles winemakers use this term in a totally unfunny way. A “bung hole” is far from anyone’s derrière. It’s simply the opening in a cask in which wine can be put in or taken out. Extra points for keeping a straight face while you say this one.

Casks aplenty: Let’s get serious. The elegant, rich reds produced by Seven Oxen Estate Wines are delicious when paired with good conversation, good steak, and perhaps a little friendly laughter. Try their 2013 Zinfandel, which features ripe red fruit, subtle vanilla, and an oak finish. (This is an awesome micro-winery.)

2. “Wine Thief”

Stop, thief! Sure, there’s probably criminals out there who manage to get themselves arrested for commandeering truckloads of premium wine (a scary thought for us boutique wine lovers out there). A “wine thief,” in reality, is a very commonly used tool that works almost like a turkey baster to extract wine from a barrel. Truly, we are very grateful for all the wine thieves out there: They allow winemakers (and us) to taste what’s sitting in the barrel long before the wine has matured.

Barrels of fun: Book a private vineyard and barrel tour at Pelletiere and perhaps get a sneak peek taste of the coming vintage. We promise, you won’t get caught red-handed. (Talented vintner, winemaker and vineyard manager are all women!)

3. Leesy

This one just sounds silly—or perhaps like some new up-and-coming hip hop star (Lil Leesy has a nice ring to it, no?). Actually, it is a funny-sounding tasting term for the rich aroma that can result from wine “resting on its lees.” What is the lees, you ask? Take a look at the bottom of a bottle of natural/unfiltered wine. It’s simply the sediment consisting of dead yeast cells, grape pulp, seed, and other grape matter that accumulates during fermentation. Sounds gross, but it makes wine amazing.

4. “Foxy”

Foxy lady? No, we’re not coming on to you. If a winemaker starts throwing words like “foxy” around the tasting room, just keep your cool and rest assured he or she is merely describing the musty odor and flavor of wines made from vitis labrusca, a common North American varietal. No shade to this grape, but most winemakers would not want their wines to share “foxy” characteristics, even if you’d prefer to be described that way.

And now for something completely different: There’s absolutely nothing musty about this bright white, which is as clear as a summer day in Paso. Écluse Wines’ 2016 Prelude Rhone Style Blend showcases aromas of peach, tropical fruit, and a hint of honey. A glimmer of citrus and pineapple round out it’s totally fresh appeal. (Écluse supports eye-seeing dogs with their “Blind Dog” red blend, thumbs up!)

5. Cellar Rat

Before your skin stars crawling…We are not talking about those flea-bitten miscreants that plague our attics on occasion. They are, in fact, the upstanding (and very, very hardworking people) who work in the wine cellars of most wineries. Commonly known as one of the lowest jobs on the totem pole (due to the low light, humidity, and never-ending dirty work). However, this position is not anything to be ashamed of. These folks are only lovingly called  “rats,” and they are often known to work their way all the way up to the title of award winning winemaker. Sure, it’s more favorable to work in the fresh air of the vineyard, but we all have to start somewhere, right?

From the cellar to stellar: Respected boutique Paso Robles winery Bodega de Edgar was started by a self-proclaimed “Cellar Rat” who went on to learn all aspects of the wine industry. His enthusiasm only grew, and so did his fans. Now Bodega de Edgar produces nearly 2,500 cases of fabulous Spanish style wines each year. (Edgar’s passion shines through in all of his outstanding wines.)

2. Paso Wine Man Jazz Band at Four Lanterns

When: Sunday, July 7 from 5-8 p.m.
Where: Four Lanterns Winery

Use your jazz hands. Join Four Lanterns for a summer concert you won’t soon forget. Allow frontman Casey “Paso Wine Man” Biggs to usher you back in time with classic Hollywood jazz paired with delicious Paso Robles reds, whites, blends, and rose offerings. Nosh on food provided by Hurricane Kitchen food truck and come early to stake out the perfect spot on the lush lawn. 5 Essentials to Pack for Your Summer Paso Wine Trip

There are plenty of fun things you’ll want to pack for your summer vacation in Paso Robles (a selfie stick, a flamingo pool floaty, and that killer new pair of merlot colored heels, to name a few). However, you won’t want to forget the essentials. We hate to sound like your mom here, but don’t forget a sweater! With hundreds of varietals to choose from, Paso Robles Wine Country is far from a minimalist wine tasting destination. Still, when heading out the door, we like to “KISS:” keep it simple, stupid. Whether you choose white, red, or blush, don’t leave home without these five non-negotiable must-haves.

1. A Water Bottle

Happier with H20: On a good day, alcohol is dehydrating. In Paso Robles, where temperatures are known to sizzle into the triple digits each summer, dehydration can creep up even more quickly. As the day wears on and the sun shines brighter, make sure you’re consuming enough water to avoid headaches and dizziness (a good rule of thumb: one glass of water per glass of wine). Although you can always grab free water at any Paso Robles Wine Country tasting room, be sure to come prepared with your own bottle for vineyard and winery tours (not to mention the drive between tasting room stops). Keep a refillable gallon jug in your car or bag. We promise—your head will thank us tomorrow!

Tip: Spend the day out and about in Paso Robles Wine Country, but make sure to pace yourself and drink lots of water so you can have the gusto to attend Penman Springs’ Second Friday Barbecue! Slated for Friday, June 14 from 5:30-8 p.m., enjoy barbecue, live music, and wine. Stay hydrated and be bright eyed and bushy tailed.

2. Protective Clothing and SPF

Cover up: We love our sun here in Paso Robles (as do the grapes), but we also know how to protect our skin from those damaging rays. Most wine tasting excursions take place between 11 and 3p.m., when the sun’s UV rays are strongest. Don’t get burned!  Pack a loose outer layer—like a long-sleeve cotton shirt, sunglasses, comfortable shoes, and a wide brimmed hat. Go for a broad spectrum SPF slathered over your face and body in the morning (a shot glass-sized amount will do), then reapply every two hours while in direct sun. All that said, don’t be fooled into thinking these hot afternoons will roll on forever. Evening lows can fluctuate by more than 50 degrees. Your mom was right: Do bring a sweater.

At Robert Hall Winery, you can bring your glass outside and play a little bocce ball or take on a lawn game like Giant Chess or Connect Four. When you’re dressed properly with protective clothing and shades, fun in the sun is a total breeze.

3. A Map

Proceed to the route: It’s no secret that some regions of Paso Robles Wine Country will be spotty zones for your cell. Depending on your cellular provider, you may have trouble accessing service in one area, but not in another. When heading for the hills—and particularly through San Miguel’s Pleasant Valley Wine Trail, you’ll want to have a map in hand (or at least downloaded). We highly suggest you come prepared with a backup navigation plan so you can let the good times roll. Google Maps is great when it works, but it’s best to have a GPS backup if possible, or download our free Paso Robles Wine Country map here. You can always stop at a tasting room to ask for directions or access the internet when in a pinch. Folks in Paso Robles are some of the friendliest around and the WiFi is truly free.

Tip: With world class Bordeaux and Rhone style wines, Villa San-Juliette Vineyard and Winery is worth the drive into scenic-yet-rugged San Miguel. Plan to attend an event, like a sushi-making class (coming up June 13). You won’t want to get lost for this one, so download your map before heading out.

4. A Snack

Keep your hunger in check, or you may need to check out early. Many Paso Robles wineries boast sit down restaurants that rival some of the best eateries around. That said, many wineries serve only smaller bites, like cheese plates. Many do not serve food at all. Yes, those oyster crackers are great for preparing your mouth to go from the grenache to the syrah, but they do not a meal make! It’s always a good idea to eat a hearty breakfast and make lunch plans before you embark on your tasting experience (and make a reservation if needed). However, you’ll also want to bring an easy, filling snack to hold you over, too. Wine is acidic and can upset your stomach, especially if you haven’t had enough food to start the day. A bag of nuts, a prepared sandwich from a local deli, a banana, or a blueberry muffin procured from your morning coffee stop are all no-frills, easy grab-and-go items that will take you from hangry to happy.

Tip: Plan to have lunch at a local winery and be sure you know the current hours of operation. Opolo is known for its flavorful zinfandel and wood-fired pizzas, which you can enjoy on a beautiful sun dappled patio. Is there any better way to curb those hunger pangs than a shared ‘za?

5. A designated driver and a full tank of gas

Don’t get caught on empty. Paso Robles Wine Country is an expansive swath of terrain and its beauty lies in the fact that you won’t find gas stations (or fast food drive-thus) on every corner. While driving through verdant vineyards and majestic oaks, it’s easy to get sidetracked (the view is dreamy, isn’t it?). When that gas light turns on, be sure to perk up and heed the call. Make sure your DD fills up on gas in downtown Paso Robles or on Highway 46 West/East before traversing too far into the hills. Not only would running out of gas ruin all the fun for the day, but it could be quite difficult to contact AAA when you’re twenty miles from the nearest main road with limited cell service.

Tip: Better yet, hire a driving service—especially if you’re hitting some great wineries as well as a distillery, like KROBĀR Craft Distillery, located on Paso Robles’ Highway 46 wine trail. Wine tours are a great responsible way to experience the region without all the planning (just be sure to bring essentials #1, #2 and #4, listed above).

5 Reasons Great Wine Really Does Start in the Vineyard

You’ve probably heard the term “great wine starts in the vineyard.” It seems every winemaker around Paso Robles Wine Country humbly points to his or her vines as the real reason behind those high point scores. Well, there’s a reason why. There’s truth to this oft heard mantra. It is no well kept secret, friends. Good vines equal good wines—and, as we all know—good wine is hard to fake. Either a bottle boasts that je ne sais quoi or it doesn’t! As it turns out, that appealing “something special” can be pinned down to one overarching factor. You guessed it. It’s all about the vineyard.

1. Terroir

What the heck is this “terroir” everyone’s talking about? You can call it the “sense of place” or “essence” specific to a particular vineyard or plot of land. All you have to do is try pinot noir from the same vintage yet sourced from two different Paso Robles vineyards to understand. Combined factors like microclimate, soil, proximity to the coast, water levels—even the way the breeze might waft in at a certain hour—are known to significantly add or detract from the finished wine

Brecon Estate is home to nineteen acres of some of the original, Adelaida district, Bordeaux-varietal plantings of Cabernet Sauvignon and Cabernet Franc. When you taste these bold reds, you know exactly where they came from.

2. Farming

The farming of the vineyard truly matters. There are big, commercial farms that produce big, commercial wines (these tend to come in jugs or boxes at a very low price at your local supermarket) and then there are boutique farming operations that produce less volume yet higher quality. It’s not unlike the organic heirloom tomato grown by a small producer versus a hot house tomato grown from a GMO seed. Both are tomatoes, but which would you rather slather with olive oil and eat straight from the vine?

Lusso Della Terra, Italian for “Luxury of the Land,” was created to express a true love and passion for the complexity of the grape and the vineyard from where it was grown. The winery specializes in high quality, handcrafted, ultra premium wines that are released in limited quantities. Quality over quantity, to be sure.

3. Purity of Varietal

When a particular wine grape is allowed to ripen with optimal weather conditions, it is bestowed a harmonizing balance of sugar and acid. Let the fruit linger longer and the sugars may develop further; pull them sooner, and preserve the fresh acid. It is always up to the winemaker to perform this dance—and to know just when to pull that fruit from the vine. Subtle yet crucial elements like minerality begin right there in the fruit (without  human intervention), and cannot be faked later down the line. A varietal that is allowed to ripen to a balanced and natural state is what many call “varietally pure” or “expressive” of its nature. When your fruit is this balanced, this true to itself, there is no need to throw flavorings into the wine (oak chips, for instance, are often used to mask a sub-par fruit). This is simply not done in Paso Robles Wine Country!

At ONX, the goal is to raise concentrated and highly expressive fruit. The winemaker balances each crop to allow the vines to focus their energy on a limited number of clusters. The vine canopy is manicured to allow dappled sunlight penetration and air movement within the vine canopy.  ONX also employs a variety of trellis approaches that match the rootstock, scion, and soil combinations. This all adds up to varietally joyful wines.

4. Sustainability


When we say “great wine” we aren’t just talking about flavor. After all, what is a “great” bottle of wine worth if its very existence is damaging and degrading to the Earth? When wines are farmed in a biodynamic manner—honoring the unique web of life—it tastes all the better. Look for certifications like “natural,” “sustainably farmed” and “biodynamic.” These wines are made without pesticides and are farmed in such a way that farm workers, surrounding ecosystems, and the land itself is protected.

Vines on the Marycrest is located on 26 acres of steep hills in the Adelaida district of westside Paso Robles, a warm climate. Wanting to farm sustainably and retain as much of the unique character of the land, the winemaker dry farms the vineyard, which causes the vines to plant deep roots in search of water. The vines are also head-trained (no supporting trellises), allowing the plants to grow naturally.

5. Depth of Connection


Drinking a bottle of wine is a full body experience: The tannin prickling on your tongue; the round fruitiness filling your mouth; the floral bouquet encompassing your nose. When you actually walk through the vineyard where that bottle was made, a 3D picture of that wine’s lifecycle springs into action. To stroll the wine’s birthplace and feel the ground under your feet, to smell the soil and experience the subtle microclimate, is an incredibly beautiful experience. This added layer of education can transform a day of wine tasting into a truly immersive realm.

Dover Canyon Winery is located on Vineyard Drive in the Willow Creek appellation and the grapes are grown on a west-facing petite strip of calcareous soil along Vineyard Drive (optimum for growing Zinfandel and Rhône varieties). In Paso Robles, there are no “average vineyards.” This one, to be sure, is pretty close to heaven on earth

5 Reasons to Love the Harmony Wine and Beer Festival

Clear your schedule and mark this event down with a big fat Sharpie. The Second Annual Harmony Wine and Beer Festival is back (Saturday, August 3 from 1-4:30 p.m.), it promises to be bigger and better than ever. The tiny town of Harmony, California has been lovingly restored in recent years, and the only thing it’s missing this summer is YOU. With so many events kicking off in and around Paso Robles Wine Country this time of year, it can be difficult to keep them all straight.

You’d be crazy to miss this one, though. Here’s five reasons to high-tail it to SLO County’s quirkiest town. Don’t let its famously small population (18, maybe 26 if you count the cows) fool you. You’re in store for a massively good time. P.S. you’ll want to get your tickets before June 16 to snag early bird pricing. This one’s sure to sell out in a big way!

1. Harmony’s Historic Past

What’s up with Harmony anyway? You may have heard whispers about this quaint road stop located north of Cayucos and south of Cambria off Highway 1. Perhaps you’ve seen photos of the hilarious Harmony sign, proudly emblazoned: Population 18.” The town of Harmony is known for its picturesque storybook feel, impossibly tiny post office, and—of course—Harmony Cellars, perched atop a nearby hilltop. Settled by Swiss farmers in the 1800’s, Harmony boasts a rich dairy heritage (it was home to Harmony Valley Creamery, a cooperative, which ran from 1901 to 1955). In the 1960’s, the town became known as an artist’s hub, and you can still find glass blowers creating their wares to this day. The creamery building also still stands, as does the cozy Harmony Chapel, where you can get hitched, if you’re feeling the urge. Strolling the grounds, you’ll soon find that every bit of sea glass tells a story. It’s a story you’ll want to explore—and revisit—for years to come.

 

2. Celebrate 30 Years with Harmony Cellars

Roll out the red wine carpet: 2019 marks Harmony Cellars’ 30th Anniversary! Join the Mulligan Family in celebrating this milestone occasion in style. Harmony Cellars offers award-winning wines and picturesque views of the surrounding coastal countryside (you’ve just got these views see it to believe). Established in 1989, owners Chuck and Kim Mulligan built their boutique winery to reflect the serene and unpretentious beauty of Harmony. Winemaking in the tiny town of Harmony is not new, and the tradition harks back to the late 1800s. Kim Mulligan’s great-grandfather, Giacomo Barlogio, was a founder of the old creamery cooperative and was famous for his homemade wine. Today the winery sits on a part of Giacomo’s original land holdings; land that’s been in Kim’s family for four generations. As a tribute to Kim’s heritage, Harmony Cellars produces a special reserve wine labeled “Grandpa Barlogio Zinfandel” that is available only in the Harmony tasting room. Be part of the history and be there when this historic winery turns 30.

3. Diverse Tastings

More is more even in a one-cow town. Paso Robles Wine Country is a universe of flavor surrounded by a galaxy of epicurean stars. Indeed, SLO County as a whole is home to an impressive array of illustrious libations, including craft beer, wine and cider. At the Harmony Wine and Beer Festival, you need not choose just one region or microclimate. Enjoy them all (OK—not all, but you do get unlimited pours from a large breadth of local purveyors). Savor Harmony Cellars robust offerings—from buttery Chardonnay to crisp Riesling, spicy Zinfandel to a voluptuous Cabernet—as well as18 of SLO County’s finest wineries and breweries all in one enchanting locale. It’s not a storybook ending. This is real life!

 

 

4. Eats, Art, Music, and More

It’s not just about tasting (although it is totally about tasting). The Harmony Wine and Beer Festival will be ground zero for laid back summer fun, too. Groove to live roots music by The Chad Land Band, grab a snack or sweet treat from a local gourmet food truck (including ice cream from Harmony Creamery Scoop Truck), or pop into Harmony Glassworks and watch a gaggle of glassblowers create glittering wonders. Have you seen the red hot glass molded and shaped before your very eyes? If not, you’ll be entranced by this unique process, to be sure. Harmony Pottery offers up the perfect place to snag a souvenir: Take home lovely glass tableware of your own or swoop up some one-of-a-kind pottery. Yes—they’ve got decanters a plenty!

 

 

5. Give Back to the Community

It feels good to do good. This festival is a charitable event for Infant Essentials, a nonprofit organization created to provide the homeless, low-income, and under-served infants in San Luis Obispo County with diapers, baby wipes, formula, and other essential comforts that no infants should be without. In fact, the first ever Harmony Wine & Beer Festival was held in August 2018. Just shy of 600 festival goers attended and nearly $22,000 was raised for Infant Essentials. This cause is close to organizers’ hearts and you’ll leave knowing that you did more than sip and swirl.

Who’s to say that wine tasting is a purely grown up activity? Sure, your sixteen-year-old probably shouldn’t be consuming old vine zinfandel by the carafe, or any wine for that matter (although the French mighty actually argue this point). However, your kid can still tag along and enjoy the ride, savoring all the food, vineyards, and general wonderment that Paso Robles Wine Country has to offer.
