EVENING IN MACHU PICCHU
December 4, 2026 · Nicola Restaurant · San Luis Obispo
The second vintage of Maison Mittal’s Bordeaux-inspired wines through Chef Nicola Allegretta’s culinary interpretation, in an intimate, formal four-course dinner.
At Nicola, classical Italian craftsmanship meets the vibrant ingredients of Peru through Bachiche cuisine, a culinary tradition born from the meeting of these two cultures.
For us, this is also a meaningful reunion: Chef Nicola Allegretta was the chef with whom we held our very first wine dinner.
Born in southern Italy and trained in Puglia, Chef Nicola Allegretta brings a classical Italian foundation to his exploration of Peruvian cuisine. His culinary journey has taken him from the creation of Mistura to representing Peru at the Food & Wine Classic in Aspen. At Nicola, that journey finds expression in Bachiche cuisine, where Italian craftsmanship and Peruvian ingredients share a rich and distinctive history.
For this intimate, four-course dinner, Maison Mittal’s Bordeaux-inspired wines enter that conversation. Each pairing offers a new perspective on the wine, revealing its character through the textures, flavours and imagination of Chef Nicola’s cuisine.
