Through the Extended Education Program of Cal Poly San Luis Obispo, Chef Eric Olson provides a fun and interactive introductions and general overview to the business and art of distilling spirits. Eric will walk you through the basic understanding of equipment such as pot and column stills, fermentation of grains and fruits, and familiarize you with use and application of various yeast strains and their influences on flavor profiles. You will become familiar with both local and federal laws, labelling and bottling, and nosing and blending. Course # NCR 9716. Must be 21 years of age to attend; ID will be requested at the door.
