Art of Whiskey Making

Inspired from his Cal Poly Intro & Advanced Distilling courses, Eric takes you on a progressive journey through the art of whiskey making. From his studies in Kentucky to his educations abroad, he will introduce you to the basics of malting, mashing, fermentation, active distillation, maturing and proofing.

You will taste from our resting barrels and be familiarized with how to identify the various whiskey varietals. This class is fun, engaging and as always very interactive!

Must be 21 years or older and provide valid ID at the door. Limited to 15 spaces.

Dinner in the Dark at Parrish Family Vineyard

This is a food & wine pairing unlike any other as we host the first-ever Dinner in the Dark event! Join us from 7:00-9:00 at Parrish Family Vineyard.

First up we will guess the mystery item based on smell, taste and texture. Sounds easy right? Except that the room will be dark and everyone will be wearing blindfolds and ponchos.

Next, we will have a blind tasting where we can’t see the color of the wine and will have to guess based solely on smell and taste.

Then relax and enjoy a paired dinner with items from the first challenge paired with wines from the second – with the lights on!

Tickets are $100 per person and are not refundable.

Unfortunately dietary restrictions or preferences cannot be accommodated for this event and a menu won’t be released in advance as that would ruin the surprise.

You will become familiar with both local and federal laws, labelling and bottling, and nosing and blending. Course # NCR 9716. Must be 21 years of age to attend; ID will be requested at the door.

Advanced Distilling- Cal Poly Extended Education, #NCR 9723; 2-day course

This class 2-day course will take you through the hands-on experience of producing distilled spirits. Along with gaining a basic understanding of what goes into producing the various categories of distilled spirits such as whiskey, both grain/malt, vodka, gin and brandy, we will walk you through the principles of fermentation using active mash tanks, firing up the still and identifying the various chemical alcohols produced in the process, distinguishing the cuts. We will review the barreling process, blending, proofing and preparing for bottling and discuss the such topics such as distillation in copper vs. stainless and distilling with environmental consciousness. Learn to identify individual attributes of rum produced within other regions such Cuba, Jamaica, Puerto Rico and America. We will touch on organic certification process, the agencies involved and the requirements of handling and labeling. The class will conclude with a formal tasting by two local distillers.
